Hakka Salt-Baked Chicken
Chinese culture scholar and cookbook author Barbara Troop introduced F&W readers to the rich diversity of China’s gastronomic regions, including the Hakka of southeast China. It is most famous in Hakka cuisine, a whole chicken which is cooked in hot salt and is highly juicy and not over salty. Trope explained that the Hakka cooks have one hand in the north and one in the south; The northern hand reaches for an extra pill of garlic, ginger, and rice wine, while the southern hand prefers for a lighter colored sauce and favors steaming over the stir-fry. This chicken, while served with a subtle, bold dipping sauce, is made with fresh ginger of Northern style. The quality of the bird makes or breaks this dish – which you like best.
